The Max Rubner Institute (MRI) is a German governmental research organisation which belong to the Federal Ministry of Food Agriculture and Consumer Protection. The aim of the MRI is the provision of
independent research on different aspects of consumer protection with aiming on nutrition and food. Important research topic are nutrition relevant food components, sustainable food production
processes and the quality and safety of foods.
The Institute of Safety and Quality of Fruits and Vegetables deals with all aspects of product relevant aspects of quality and safety. The institute covers food analytics, post harvest physiology,
microbiology, development of novel methods for quality assessment and molecular food mycology. The Molecular Food Mycology Research Group focuses on the interphase between fungus, food product and
mycotoxin production. The aim of the research is to find new measures to control mycotoxin biosynthesis based on molecular data.
